EGGNOG FRENCH TOAST

Eggnog is such a tradition in my family that it's impossible to sip a glass without feeling a rush of nostalgia. It’s such a treat that over the past few years we’ve started having it for breakfast, too—not to drink, but in place of milk in our favorite French Toast recipe. It’s really delicious, and it makes for a perfect once-a-year meal that feels truly special. To make, simply whisk together 4 large eggs, 2 cups of eggnog, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground nutmeg in a large bowl. (If you have the time, freshly grated cinnamon and nutmeg really makes it delicious). For the bread, I find that challah or brioche works really well. The best French Toast has a slightly gooey center so rather than just dipping it in the mixture, I like to let the bread soak for at least one minute on each side. Place the saturated slices onto a hot frying pan or griddle that’s been greased with cooking spray and a bit of butter. Cook on medium-high heat for about 3 minutes each side (hot enough to warm through to the center but not so hot that you burn the toast). 

Remove from heat and cover with butter and powdered sugar. Serve with maple syrup (organic is best) and a handful of fresh strawberries, or whatever
you like.
