Sneaking out of the office for lunch during the week isn’t easy. Hosting my own lunch is even more of a challenge! However, there is something so special and intimate about having lunch with great friends at home, so every few months or so I make sure to schedule lunch at my place. Since I am coming from the office, I like to have a mix of food that I can make in a dash along with food I’ve ordered. Making everything from scratch just isn’t a possibility, plus with so many great takeout places in NYC I don’t try to compete!
SPRING LUNCH MENU
EASY SPRING SALAD: Mixed greens tossed with avocado, tomatoes and cucumbers, takes only a few minutes to put together. Toss with your favorite olive oil and balsamic vinegar with a touch of lemon.
DELICIOUS LOBSTER ROLLS: The owner of Luke’s Lobster in New York hails from Maine and has a direct relationship with the local lobsterman who supply him with their fresh catch. His lobster rolls have just a swipe of mayo, a little lemon butter, and a few spices. They are delicious and once you taste one you will never be able to go back to lobster rolls drowning in mayo. They are also such a fun choice for lunch.
E.A.T. POTATO CHIPS: You can’t have a lobster roll without chips. E.A.T in New York makes some of the best.
GELATO: Il Laboratorio del Gelato on Orchard Street in New York has the most unique flavors. Their Lime Fresh Mint sorbet is a perfect spring flavor.
WINE: Livio Felluga Pinot Grigio is an incredible wine in a beautiful bottle and it pairs perfectly with the lobster.
